Yannick Augy has long had a pronounced passion for fine dining growing up in one of the world’s greatest culinary epicenters. Born and raised near Sancerre in the Loire Valley of France, Yannick knew that the restaurant and hospitality industry will be his future.
He went on to earn his education at the Culinary School Jacques Cœur | Bourges | France, obtaining a bachelor’s degree specializing in “Culinary Genius and Arts”. Yannick then studied Hospitality Management and Tourism Accounting at the University of Angers and soon would embark on his professional journey.
While studying, Yannick trained as Demi-Chef at the Michelin-starred Le Clos des Sens of Laurent Petit in Annecy - Châteaux & Hôtels de France and Assistant Maitre D’ at Hostellerie le Phébus in Provence – Relais & Châteaux. His diverse training allowed him to broaden his knowledge in various fields of hospitality, enabling him to better understand success at a restaurant or hotel in its various facets.
Prior to relocating to Las Vegas, Yannick worked extensively in the culinary and hospitality fields in France, London and Monte-Carlo. His portfolio is comprised of positions at a number of high-end hotels throughout France, United Kingdom and Monaco, including Hôtel New York at Disneyland Paris, Hôtel Concorde Saint-Lazare in Paris, Hôtel de Paris in Monte-Carlo, and Hotel Sanderson in London with Alain Ducasse where some of his tasks included budgeting, employee relations management, overseeing customer databases and more.
In 2007, Augy took on the position of Food & Beverage International Management Associate Trainee where he began his career at the MGM Grand Hotel Resort & Casino in Las Vegas. He quickly climbed the ranks within the company, serving as Restaurant Manager for several restaurants to Assistant General Manager for L’Atelier de Joël Robuchon. In just two short years, Augy became the General Manager for the “Chef of the Century” Michelin-starred restaurant where he managed a staff of 40, participated in all marketing, public relations and revenue management practices, and spearheaded employee engagement programs.
He has received countless awards for his work in hospitality, such as the MGM Resorts Warriorship Award, represented France at the Restaurant Service World Awards (WorldSkills), and National Restauration Service Award among several others.
Yannick joined Hakkasan Las Vegas Restaurant in 2012, as Assistant General Manager where he worked to open the 20,000-square-foot, dual-level venue in May 2013, contributing his long, rich history in hospitality and dining with the Hakkasan brand. In 2013, he took over the position of General Manager, continuing to offer his unique and original ideas in dining service, meticulous attention to detail, and a thorough knowledge of the MGM Grand restaurants and clientele. Yannick was appointed Director of Restaurant Projects, US in April 2016 and contributed to the successful openings of both Yauatcha concepts in Waikiki and Houston. He also oversaw restaurant projects in Los Cabos, Mexico.
In late 2017, Yannick was selected Director of Learning & Development, US. With this role, Yannick had the opportunity to shape a new department to create strategies, effective impementation of training, learning and development policies, practices and procedures. Due to his extensive background and great knowledge of Hakkasan Group brand portfolio; Yannick also participated in the success of Sake no Hana in Bali by establishing standards and in-the-field training sessions. In February 2019, Yannick played an integral role in the opening of Hakkasan Jakarta. Following its success, the US Restaurant Operations portfolio was added to his role.
In January 2020, Yannick started a 2-year term as Food & Beverage chair for Forbes Travel Guide - Standards Advisory Committee. During this tenure, Yannick will partake in discussions and recommend global service standards and how to ensure they remain relevant and geographically applicable to the demands of today’s luxury traveler.
